Caesar Salad with crispy-crunch Schnitzel

Heat 2 tbsp olive oil in a frying pan and fry 2 Wiener Schnitzels for 6 minutes, turning them regularly. For the dressing, beat together 2 tbsp extra virgin olive oil, 1 tbsp lemon mayonnaise, 1 tbsp water, and salt and pepper to taste. Arrange 2 heads Little Gem lettuce, cut in strips and 1 red onion, sliced in rings on 2 plates. Cut the Schnitzels in strips and lay them on top of the salads. Sprinkle the salads with the dressing and garnish with 2 tbsp capers and 2-3 tbsp curls of parmesan cheese. Serve with crusty ciabatta bread.
